Potatoes are the leading vegetable crop in the United States (not including sweet potatoes), contributing about 15 percent of farm sales receipts for vegetables.  Over 50 percent of potato sales are to processors for french fries, chips, dehydrated potatoes, and other potato products.

Potatoes can be grown any season of the year in the U.S.  As evidenced by the chart below, a large majority of potatoes are grown in the fall (about 88 percent) due to ideal temperature conditions.  However, production in all other seasons is more profitable due to the demand for recently grown potatoes.  Potatoes are well-suited for long-term storage in climate-controlled rooms or containers.  Thus, the fall potato crop can be sold from September to August of the following year.

Imports and exports are few compared to the total potato production.  Most potatoes traded are processed—french fries, frozen products, chips, dehydrated products.  Canada and Mexico respectively import and export the most potatoes to and from the U.S.
